You can change the background color of the app if you want. You can also turn off all notifications. Delete the e-mail app from the phone if you want. You can turn off the internet connectivity if you want. If there is no internet or wifi connection then you will not get any notification. Also many apps will not work on dumbphones.
If you want, you can uninstall everything except the basic dialer, message apps. You can disable inbuilt apps if you want.
